Thai Coconut Green Rice and Chicken Curry
This deliciously divine dish only takes 30 min to make! Make it for someone special and rest assured - they won't be disappointed!
preparation time: 10 min
cooking time: 20-25min
- 1 cup white rice
- 1/2 tsp butter
- 11/2 cups water
- 1 lb chicken breasts (skinless and boneless)
- 1 pack (250g) mushrooms
- 3 tsp Thai green curry paste
- 1 can Thai coconut milk
- 1-2 tbsp soy sauce
- 7-8 scallions - green part only
- salt and ground black pepper
1. Boil 1 1/2 cups of water in a small saucepan. When the water starts to boil add rice, a pinch of salt, and 1/2 tsp butter. Mix together and boil for 10 min or until the water evaporates.
2. Slice the scallions (green parts only).
3. Cut the meat into thin slices, beat the slices with a meat tenderizer, and cut those slices into small bite size pieces.
4. Slice the mushrooms into thick strips. Put everything on separate plates.
5. Heat 2 tbsp olive oil in a large frying pan on a medium-high heat. Add chicken and cook until golden brown.
6. Add 3 tsp of Thai green curry paste, mix together, and cook for 3 more min.
7. Add scallions and cook for 3 more min.
8. Add mushrooms and cook for 2-3 min. Sprinkle with salt and ground black pepper.
9. Add rice, soy sauce, and the coconut milk. Mix everything together well. Cook for 5 more min. Serve hot
