Spanish Broccoli Tortilla

This yummy Spanish dish is a perfect appetizer! It is also a perfect dish for a breakfast or lunch!


preparation time: 15 min
cooking time: 40-50 min

- 6-8 eggs
- 6-8 potatoes
- 100-150g fresh broccoli
- 1 small onion
- 2-3 tbsp vegetable oil
- salt and ground black pepper


1. Wash, peel, and cut the potatoes into small cubes.


2. Wash and slice the broccoli.

3. Slice the onion.


4. Boil cold water in a small saucepan and then add broccoli. Boil broccoli for 3-4 min.


5. Heat 1 tbsp vegetable oil in a large frying pan on a medium-high heat. Add onions and cook until golden brown.


6. Add the potatoes to the onions and cook for 20-25 min until golden brown.


7. Remove the broccoli from the saucepan and transfer them onto a small plate. Let the broccoli cool off and dry off.


8. In the meantime, beat the eggs in a large bowl.


9. Add the broccoli to the eggs.


10. Transfer the potatoes with the onion onto the eggs and broccoli. Gently fold them in. Garnish with salt and ground black pepper.


11. Add the remaining 1 tbsp vegetable oil onto the large frying pan. Transfer the potato and eggs mixture onto the pan. Cook on a low-heat for about 20-25 min.


12. When the potato-eggs mixture becomes solid, gently turn it upside down and cook for 5-10 min more. Serve hot!
